Description

Test cooks share their favorite low-effort, high-reward complete weeknight dinners, most ready in an hour or less.
Imagine surveying your pantry or fridge and realizing you already have every ingredient you need to make any number of fast, flavor-packed meals. Sounds like a dream? These back-pocket dinners make it a reality, with recipes that transform foods such as a rotisserie chicken, a baguette, hummus, or quinoa into full meals using just five ingredients (plus salt, pepper, and fat) that require little in the way of planning.
What these recipes lack in ingredients, they more than make up for in flavor and creativity. We use simple techniques to our advantage to coax the maximum amount of oomph out of each component:
Turn rotisserie chicken into a cheesy, melty tart with frozen spinach, Brie, and store-bought crustShape lemony meatballs from ground chicken and quinoa–given a flavor boost from garlicky hummus that doubles as the base for a sauceGet resourceful with our Grilled Tofu with Charred Broccoli, Peanut Sauce, and Crispy Shallots, repurposing the often drained-away shallot frying oil to coat the broccoli before grilling for an added layer of savoriness
With each recipe, a test cook’s commentary gives an inside peek into the recipe creation process, whether offering a tip for using a high-impact ingredient like red curry paste or oil-packed sun-dried tomatoes (we help you compile a treasure trove of useful flavor bombs) or an imaginative technique (such as mincing carrot tops for a garnish). These recipes and tips will have you looking at your pantry with fresh eyes.

    Great recipes
This book has easy and delicious recipes for a quick week night meal! Love the ATK cookbooks

Easy flavorful dinners with few ingredients.
I really like the cookbooks by America’s Test Kitchen, and this is another one I like. The premise of this book is that a team of test cooks and editors give their recipes for easy cooking they do at home when they need recipes quickly and with few ingredients. There are chapters on chicken, meat, fish, noodles, meatless Mondays and Dinner from the grill.I’ve seen some reviews state the ingredients are exotic, but I already own most of the spices and pantry items asked for. If you don’t have some of these spices or ingredients, many are at the grocery store (I live in a suburb of a large city, and can find them here easily). If not, you can buy them on-line.This is a hardback cookbook with many photographs. I would recommend this cookbook to anyone who enjoys global cuisine as well as the less exotic, and is looking for quick and mostly easy recipes.

    These Recipes are Delicious!!!
I am so pleased with these recipes. The flavor of the meals tastes like you added 10 ingredients, not just 5. I’ve made several of these over and over again. They are super simple to make too. I keep searching and waiting for them to put out another collection.

    It ok
    Have try recipes yet

    easy, and yummy stuff
got Kindle book, will be getting paper version! We really enjoy the recipes, family asks for repeats. The puff tart with Boursin can be tweaked and makes a great “party nibble”, or meal side.

    Another great ATK book!
I am absolutely thrilled with this book! I have several ATK cookbooks and they are always a great resource to turn to for inspiration. This book is no different. And I didn’t recognize any of the recipes from other books (which sometimes happens. Like I said, I have a lot of their library). I have made several recipes from this already and boy do they deliver! I made the broccoli and cheese calzones (my husband is already asking me to make them again) and the black bean soup (i was skeptical of a soup without an onion base, but it was rich and delicious). If you’re looking for super simple, quick, delicious recipes, buy this book!

    Ho Hum
I like America’s Test Kitchen cookbooks – they make so many dishes and methods of cooking doable. Each cookbook has enough new recipes among the recycled recipes to make each cookbook special. This cookbook is an exception. There didn’t seem to be any recycled recipes but there were no recipes that appealed to me. Yes, each recipe only had 5 ingredients but that translates to dry and not much flavor.

    Pleasant Surprise
Initially when I got this book, I was disappointed. Like many of the reviewers, I’m a huge fan of ATK, and many of these recipes seemed so simple they weren’t appealing to me. Luckily I did not trust my initial instinct of disappointment and gave a few recipes a try. Yet again, ATK has failed to disappoint! Most of these recipes have been so good I would even serve to company. I would encourage folks that are disappointed by the simplicity of the recipes to maintain an open mind. Some of our favorites so far have been: mustard porkchops with crispy cabbage, Potato Leek Soup with Kielbasa, pork chops with horseradish green beans, pork chops with gochujang Brussel sprouts, salmon and rice with cucumber salad, lemon herb roasted cod with crispy garlic potatoes. As a busy single parent who tends to cook overly complicated recipes, this book has helped teach me that the key is combining the right flavors…not how many you have. The authors know how to pack the most punch in terms of flavor and I should never have doubted them!

Input very poor for the price of book no desserts in place would not have purchased it had I known the full content.
