    5 recipes in one week . Loving it !
    Holly cow this book is good. I bought it because needed more ideas for dinner , in one week I have tried 5 recipes (surprisingly I had most of the ingredients already in my pantry) , total success, I am a beginner cook and find it easy to do everything the book says , I’m also trying new ingredients (not complicated- easy to find at any grocery store) , I cook for my husband and I, my toddler prefers more simple or less elaborated meals, but I’m excited to keep trying recipes , I love how it invites to use fresh vegetables and natural flavors and healthy ingredient alternatives also I found the dishes very nutritious. There is something for everyone, American / Italian/ Thai /Asian/ vegetarian flavors. I would even lookAt more book of the author.

    Great Healthy Cook Book
    LOVE these recipes! Easy to pull together and so delicious. Bought this week to try to incorporate healthier meals during the week. These are easy to meal prep and freeze well! Highly recommend. Be prepared to do some cooking and prep work. Just like with any good meal, it requires more than 2-3 steps. If you’re looking for a healthy, actually tastes good cook book, this is it.

    I recently picked up the dinner tonight cookbook and it has quickly become my go to for weeknight recipes. The recipes are simple, healthy, and I use ingredients that I usually have on hand, which is a huge timesaver. Whether I’m in the mood for something quick or a little more adventurous there’s always a recipe that fits,The variety of dishes is wonderful. There’s options for everybody from Hardy comfort food to light or healthier dishes.     This has been my favourite go-to recipe book. I’ve probably made well over a dozen recipes from this book and my family has enjoyed most of them! There are a handful of recipes that have become a staple in our weeknight dinner rotation. I love that the recipes call for lots of fresh ingredients and not a lot of ultra processed or refined ingredients. I find the instructions easy to follow, and most ingredients can be found in Canada (or an easy enough swap can be made).

    Alex’s books have come up as recommendations for me and I stupidly ignored it. I’m not sure why but I feel like I’ve been burned by boring cookbooks by very famous cooks. I think over time with experience you learn more about how to make a dish delicious, what works, what is lacking and what needs to be fixed. I have a lot of books where I have to make several notes on post its and it can get really frustrating when I need to modify nearly every other recipe. If it’s a simple tweak, okay, fine. But if it’s a mass overhaul and I’m ending up having to change the whole recipe, I feel so disappointed in the book and the money spent on it.Alex’s previous book went down in price and I grabbed it with some hesitation. I felt like, okay, if it’s not good I can return it or just put it on my shelf and not feel bad about the lost money at least. And I am SO glad I bought it.Alex’s recipes are AMAZING! I absolutely love how she gives you options for gluten free, dairy free, whole 30. I don’t go by any of those but I actually started to make some changes based on her recipe options.She KNOWS what she’s doing when it comes to ingredients. I’ve made about 5+ recipes so far and each one has been great and turned out delicious. I have minor tweaks on my sticky notes but I am genuinely surprised at how well these dishes come together. How well the flavors complement one another.I would highly recommend this book and her previous cookbook if you are tired of the same old recipes that everyone else is providing. Alex is breathing new life into my meals and I absolutely love it.

    Alex always finds a way to make cooking approachable, enjoyable and delicious. Her book arrived today and I immediately was off to the grocery store to try my first recipe! We made the curry chicken skillet with sweet potatoes and YUM! We also made the one skillet lasagna which was super easy and will be on rotation in this house (TY for the sneak peek!).I have followed Alex for a few years on social media and her recipes do not disappoint. I am a proud owner of all 3 cookbooks and continue to refer back to them plus her website for inspiration.Highly recommend this book if you’re looking to try something new & healthy without sacrificing flavour.Update: I’ve cooked through the entire book and would say there are a fair amount of “easy” weeknight dinners but also many that take a good amount of prep/cook time. We were unfortunately underwhelmed by more of them than we expected but will add a few into our rotation; sour cream enchiladas, beef shawarma and fattoush salad, bang bang shrimp, chili lime chicken, and a few more.

    I’ve been following Alex since the early days on IG when I found her during my first attempt at a Whole 30 (maybe about 6 years ago?) Her recipes immediately became favourites that I have continued to return to, again and again. She knows how to add incredible flavour to all her recipes that make them all restaurant worthy – but for the most part, using simple, everyday ingredients. It’s just a bonus that most of her recipes also have a strong focus on health and nutrition. Her other two cookbooks are great – and this one is the icing on the cake! I have already made several of these easy-to-prepare dinners (in some cases all in one pot/pan), and feel like a gourmet chef! I’m so “proud” to be a long-time follower – I feel like I “discovered” her, haha, and welcome any opportunity to sing her praises to anyone and everyone. She’s the real deal!
