Description

Quite possibly the only fish and seafood cookbook you’ll ever need, from the author of the award-winning website Hunter Angler Gardener Cook.
So many people get all tense when faced with a piece of fish or a bag of shrimp. It’s understandable: you went through all that effort to catch it, or, if you bought it from the store, we all know that fish isn’t cheap. You don’t want to mess things up. Hook, Line and Supper aims to cure that stage fright once and for all by breaking down the essence of fish and seafood cookery, allowing you to master the methods that bring out the best in whatever you catch or bring home from the market.

Rather than focusing on specific species, Hook, Line and Supper zeroes in on broad, widely applicable varieties of fish – both freshwater and salt – that can substitute for each other, and clearly and carefully provides master recipes and techniques that will help you become a more competent and complete fish and seafood cook.

Hank Shaw, an award-winning food writer, angler, commercial fisherman and cook at the forefront of the wild-to-table revolution, provides all you need to know about buying, cleaning, and cooking fish and seafood from all over North America. You’ll find detailed information on how best to treat these various species from the moment they emerge from the water, as well as how to select them in the market, how to prep, cut and store your fish and seafood. Shaw’s global yet approachable recipes include basics such as classic fish and chips and smoked salmon; international classics like Chinese steamed fish with chiles, English fish pie, Mexican grilled clams, and Indian crab curry; as well as deeply personal dishes such as a Maine style clam chowder that has been in his family for more than a century. It also features an array of fish and seafood charcuterie, from fresh sausages and crispy skin chips, to terrines and even how to make your own fish sauce.

The most comprehensive guide to preparing and cooking fish and seafood, Hook, Line and Supper will become an indispensable resource for anglers as well as home cooks looking for new ways to cook whatever fish or seafood that strikes their fancy at the market.

Another great installment in Hank Shaw’s culinary series!
Even if you don’t enjoy seafood, you would enjoy this book. The amazing photographs and illustrations walk even a novice chef through what might otherwise be considered a daunting process. The history and background of the various fish, processes, and dishes take this book to a whole new level.Hank does an amazing job explaining every nuance of how to breakdown fresh caught fish and even how to locate and evaluate fish at your local market. His recipes are easy to follow with some unique ingredients, and also have suggested alternate ingredients that most of us have in our pantry. I’ve been an avid hunter for years and have relied on Hank’s books to provide me with new ideas to innovate my dinner table.I own almost all of the other cook books that Hank has authored. This book itself is a hefty hard bound masterpiece in the same dimensions of all his other books. They fit nicely on the shelf in my bar! Heck, if you are a true hunter/angler, you should own them all! I have purchased multiple copies of each as gifts for my pals and they have never been disappointed. You will not be disappointed with this book!

    Careful, detailed, terrific book
I first learned about Hank Shaw as I was watching a MeatEater episode and saw him make the Sicilian Hare Stew. I immediately looked into his massive goldmine of a recipe depository on Hunt Gather Cook, bought “Buck, Buck, Moose” and extensively used both. When this book, “Hook, line and Supper” came out, I talked myself into buying this one as well, and I am glad I did. It is a careful, detailed cookbook, with plenty of background information. It is very analytical in style, that’s what I love about this and Hank’s earlier books: it will tell you _why_ you should follow a certain procedure, what might happen if you don’t, and so on. In contrast to other cookbooks that give you a few ingredients and a list of orders to obediently follow, here I get to learn why a certain dish will work out _every time_ as long as it is done the right way. Anyone who tried cooking/grilling fish knows that there are many ways to mess things up. This book is for cooks who are also thinkers, who do not want to leave anything to chance.

Everything you need to cook any seafood.
We have learned so much from Hank Shaw’s book. Best handling practices from the time we catch our fish until we eat them. Great resource for all things seafood.

If you catch and cook fish, this is the book for you!
If you just want a cookbook for fish, you’re selling this book short. Think of it as the penultimate book for fisherman who love to eat their catch. How to prepare the fish, from filleting forward, to magnificent recipes for preparing them. The pictures of the food are magnificent. I want to cook everything in the book this week. That’s how good the food looks. And if this book is true to Hank’s others, there won’t be a bad recipe in the book. I don’t buy that many cookbooks, but Hank Shaw’s books are a welcome exception. A great gift for your fish-loving friends as well….money well spent.

    Hank Shaw does it again!
If you’re new to wild game cooking, there is only one name you need know: Hank Shaw. The man (and his partner, Holly Heyser) leads a life committed to the pursuit of elevated wild game cooking. Gone are the days of recipes that start with canned mushroom soup, thanks to Mr Shaw and Ms Heyser.Hook Line and Supper is for anyone who wants to elevate their fish cooking game; Crab Rolls will blow your mind and his section on soups alone is enough to keep you warm through the winter months ahead. If you plan to give this as a gift to someone who isn’t as adventurous of a cook fear not – the section on grilling fish is approachable for anyone, and Hank’s chapter “Pairings and Freestyling” will teach any new cook how to cook without a recipe. This books is as exceptional as Hank’s other 3 books; I cannot recommend them highly enough to anyone who enjoys cooking and eating, or as a gift to a beloved outdoorsperson. Well done Hank and Holly!

no index by fish species, otherwise good
It is a good book, but I wish there was an index by fish type to recipe. Shopping advice and so forth is great, but if you come from the other direction such as “I went for trout but caught 3 bass, let’s see what interesting recipes are for that fish”. This is difficult, you flip through all and find a recipe that includes the fish type.

Catch, Cook and Eat Fish? This is a MUST!
Just when you think Hank Shaw can’t outdo himself, he does. If you are a Shaw fan, you know he has a deep, long history with fish and he brings ALL that knowledge to the table in this book. Clearly a labor of love, and truly a gift to the reader, this has it all. No matter if you are a spare time fisherman or a trained chef, you will learn, grow and experience from Hook, Line and Supper. In true Shaw fashion, there are recipes for all types of fish and seafood as well as skill level and ingredient supply. Buy one for yourself, then go and buy for all the fisherman and chefs in your life.

Well written recipes and foundational fish cooking education
You really can’t go wrong with any of Hank Shaw’s cook books. This one will soon be as well used as the other books of his I own. Utmost attention to detail and high cuisine but always referencing substitutions for harder to come by ingredients and techniques. I consider this, and Hank Shaw’s other books to be indispensable kitchen tools. I’f you want to know how to prep and cook fresh and saltwater critters this is a great place to start or to broaden your fish game. Cudos Mr. Shaw…please kep doing what you do!

I love to cook and I love seafood, as well. I just received this book today and browsing the pages and looking at the recipes tell me that this is a great cookbook! I’ve been looking for a cookbook like this and I’m glad I found it! I’m pretty sure this will be my seafood cookbook to go to and will live in our kitchen!

  11. adam berkelmans

Hank Shaw does it again with another book that straddles the difficult line between cooking really well at home and “cheffy” food perfectly. The advice is straightforward and categorized by style of fish rather than each individual variety. This makes this book way more universal than many other books I’ve purchased that only deal with seafood from Britain or Australia for example (useless to me in Canada), and allows the home cook to easily cook any number of different fish with the same recipe. The photography is excellent and the writing is Hank’s usual no-nonsense, page turning prose. Highly recommend!

  12. evan hughes

Probably Hank’s best book to date.I bought them all. His books are good for non-outdoors people too.Well written, many excellent colour photo’s.Many interesting recipes plainly explained all sound delicious. On top of all that you can go to Hank Shaw’s Facebook page and ask questions or share information. He will usually answer in person.Well worth the money.

Hank knocked it out of the park again with this one! My kids are already drooling at all the possibilities of our fly fishing adventures to come and shore lunches ahead. Great for any level chef starting out cooking all types of fish. (The gods know I could use all the help I can get!)
