Sample Recipe: Cilantro-Lime Chicken and Rice
Prep time: 10 minutes / Cook time: 5 to 7 hours on low / Serves 6
Cilantro is the leafy part of the same herb from which we get coriander. The little coriander seeds are actually the fruit of the plant. Fresh coriander leaves have a bright, citrusy flavor that you can’t get from parsley or any other leafy green herb. Because heat takes away the bright flavor, cilantro is usually added to a dish after it is cooked.
Instructions:
1. Spray the slow cooker generously with nonstick cooking spray.
2. In the slow cooker, combine the chicken, rice, water, tomatoes and their juices, beans, corn, garlic, lime juice, cumin, salt, pepper, and oregano. Stir to mix well.
3. Cook on low for 5 to 7 hours, or until the rice is tender.
4. Sprinkle with fresh cilantro before serving.
Substitution Tip:
To make this meal vegan, leave out the chicken and add 1/2 pound dry black beans that have been soaked overnight.

Looks like good recipes
Purchased this cookbook as a gift for my daughter that has to watch her sodium. It will be a good guide on how to cut down the sodium in cooking. She likes that it’s for crockpot cooking which helps make meals easy when working. Recipes seemed easy to read.

Good For Seniors Who Don’t Like Change
I got this cookbook for my mom to go with a new slow cooker I got her. My dad has heart issues and requires a low sodium diet. My mom has been cooking the same Midwestern food in same the way for 50 years and doesn’t like to cook with unfamiliar ingredients.This cookbook is perfect for my mom. Every time I talk to her, she tells me about a new recipe she has tried from this book and she’s become more adventurous because the recipes are so approachable. The Mongolian Beef is a new favorite! My dad misses his Chinese takeout and my mom is proud she has been abole to replicate it in a healthy way.She says the recipes are easy, tasty, and uses ingredients she already has in the house or that she is familiar with. This is important as they are on a fixed income and don’t want to buy lots of ingredients to make just one dish. She’s also not afraid to make her own substitutions (i.e. using coconut aminos instead of low sodium soy sauce because that is what they have at home) and says it always works out great.This cookbook has been enjoyable for my mom and I recommend it to people wanting low-sodium, approachable, and familiar recipes for their slow cooker.

Learning to cook low sodium
I began this journey in the hospital 2019. Since then I have moved from the west to the east and I got immediately sick when I got here so I had to go into the hospital again this time it was a little more serious and I came from fast and furious to low and slow, which means I now have to do low salt diets low liquid intake and no one wants to cook low salt! So I had to do something different and I began to look for cookbooks or information about all of that with fear and trembling. This book. crockpot, low cooking, low, sodium cooking Has been a game changer and I find that I am doing better in my eating. I’ve lost 20 pounds or more and I am learning how to curb my choices. I appreciate all the wonderful recipes (could be a little larger print because my seeing at 88 is a little less than perfect) , but I give it five stars. Recipes I’ve tried are not hard and it’s very easy to put these together. Thank you for sponsoring this book.

Healthy, easy AND tasty.
After buying a crock pot I embarked on a search for the tasty, easy recipes that would replicate the wonderful slow cooked pots my mother used to make. I was appalled to find that the bulk of collections and books called for store bought dried soups and dressings, and canned “this” or “that”.This book absolutely has everything I was looking for.It begins with recipes for basics you will need, such as broths and sauces. Not a soup powder in sight!There follows the easy, mouth watering recipes I was hoping to find. Casseroles and stews, stuffed peppers and yummy squashes, hearty soups, healthy breakfasts and desserts. Vegans and carnivores will find equal value in this book.Of course the low sodium is a big bonus. Things taste so much better without the horrible gobs of salt added to processed foods. I’m always puzzled as to why they add so much salt to food. It eliminates choice for low sodium dieters. If salt were left out, those who choose to ladel on the salt are free to do so. Have made a couple of recipes from book and was surprised that I didn’t miss the added salt which would have been called for normally.I am especially excited about the alternative recipes for use rather than packaged seasoning which is quite often high in sodium.

Bought this to follow a low salt diet , I’d say most recipe’s have salt added , which makes no sense , also it’s very American, probably a book that will be donated to a charity shop I’m afraid
