    This book is an absolute model of making science intelligible in an area both complex and ubiquitous . It covers the very latest developments in a style which is clear but comprehensive. I am reading it from cover to cover but it would equally serve as a reference book. Congratulations to the authors.

    A stunning, well written and informative guide to all things fermentation. Very much looking forward to making mash-fermented hot sauce, kimchi, white soya bean miso and kombucha at home, as well as learning about techniques and gut health benefits.This is a really nice hard-back book with pages that just feel nice in your hands – it would make an excellent present!
